The project aims the development of a biological treatment using immobilized yeasts to treat olive mill wastewaters (OMW). It also aims the extensive characterization of the OMW phenolic fractions in order to identify fractions responsible for the toxic properties of these wastewaters, and fractions with recognized anti-oxidant action.
